[Vegetarian Week] Here is our winner!

Last week we challenged our followers to be creative in the kitchen, and it was impressive to see how good you are at cooking vegetarian meals! Congrats to everyone who sent us a picture of a meal, they looked gorgeous!

We wanted to reward one of you and we chose one of our followers who was very active during this National Vegetarian Week and kept sending us a picture everyday. Her name is Nicola and her Mushroom and Rocket Quinoa Crust Pizza made us really hungry! We asked her some questions about herself and why she has adopted a vegetarian lifestyle:

// Who are you?

My name is Nicola, I'm 31 and a firefighter from Manchester, I'm addicted to sports, healthy eating and being active

// How long have you been vegetarian and why?

I've always been into healthy eating but I've recently got into a more natural and plant based diet, helped a lot by the likes of deliciously Ella.

// Tell us your favorite way to stay healthy?

My favourite way to stay healthy is to plan ahead and to cook for others, showing friends and family that healthy eating is tasty and exciting. Some people have a strange perception that by being healthy your missing out - it's just not true.

We are very glad to share with you the recipe that Nicola sent us. We hope you're going to like it and try it as soon as you can! Check this out:

Mushroom and rocket Quinoa crust pizza

Mushroom and rocket Quinoa crust pizza (Makes 1 8"-10" pizza)

  1. Soak 3/4 cup of quinoa overnight in water, drain the quinoa and place in a food processor with 1 tsp apple cider vinegar, 1 tsp mixed herbs, a pinch of salt and as much pepper as you like, blitz until a dough/paste forms. (It can take a little while but it's worth it, don't worry if you can still see some of the round quinoa grains, so long as the majority is blitzed.
  2. Place it on baking paper and press out into a round shape, cook for 15-20 mins at 180 (fan oven).
  3. Remove from the oven and add your toppings (I use crushed garlic, cherry tomatoes, mushrooms and a mix of goats cheese and mozzarella)
  4. Place back in the oven and cook again for about 5 minute.
  5. Remove and top with fresh rocket.
